Recipe

Dough: (I got my dough recipe from Justine Snacks)

  • 1 cup + 1 tbsp all-purpose flour

  • 1 tsp salt

  • 8 tbsp butter

  • 3 tbsp ice water

  • 1 egg (for an egg wash)

Brown Sugar Filling:

  • 1/2 cup brown sugar

  • 1 tbsp cinnamon

  • 1/4 cup flour

Plum Filling:

  • 8 plums cut into slices

  • Sugar for sprinkling

  • 4 tbsp butter (cubed)

For the dough, combine your flour and salt and mix. Add in the 8 tbsp of cubed butter and mix in with the flour then pat it down with your hands to gently combine. Add in the ice water and continue to gently mix everything with your hands or on low in a mixer. You do not want it crumbly so don’t over-mix. Once the dough starts to combine, transfer to a floured surface and continue kneading. Cut the dough into three slices and place on top of one another to further combine. Continue this until all the butter is mixed in, add flour as needed. Wrap in saran wrap and place in freezer for 30 minutes or in the refrigerator for at least an hour.

Combine the brown sugar, cinnamon, and flour. Add crumbled nuts if desired to give a richer flavor. Mix and set aside.

Slice plums.

After the dough has chilled, set out on a floured surface. Hit the dough with a rolling pin to flatten. Roll the dough out until 1/4 inch thick into a circle. Sprinkle the cinnamon sugar filling inside the dough about an inch from the edges. You want to leave space so you can fold the dough over the plums. Place plums on top of the filling and fold the edges of the dough over the plums. Sprinkle white sugar on top of the plums and place the cubed butter around the plums. Whisk 1 egg and brush over the crust, sprinkle a little more of the cinnamon sugar mixture on the crust.

Bake at 375° for 35 - 45 minutes. Let rest and pair with whipped cream.
