Pan Con Tomate
Recipe (2 people)
2 slices Sourdough bread
3 ripe large tomatoes
1 tbsp EVOO
salt & pepper
Grate your tomatoes into a bowl. Stain the tomatoes so you take the water out of the tomatoes. Drink or discard the tomato water.
Transfer the thicker tomato mixture into a bowl. Add olive oil and a tsp of salt to the tomato mixture.
Grill or toast bread and cut into slices. Put the tomate on top of the bread and drizzle with olive oil and add pepper if desired. Garnish with basil.
