Pumpkin Bread
Ingredients
2 cans Pumpkin Puree
1/3 cup buttermilk
2 tablespoons of Madagascar vanilla extract
3 eggs
2 cups White sugar
1 1/4 cup Canola Oil
1 tbsp of maple syrup
1 tbsp of vanilla
1 1/2 teaspoons of Salt
2 cups of All Purpose White Flour
1 teaspoon Baking Soda
2 teaspoons of Baking Powder
2 tsp Cinnamon
2 tsp Pumpkin Spice
1 tsp Nutmeg
Cinnamon & Sugar for sprinkling
Preheat your oven to 400 degrees.
Place pumpkin puree in a paper towel to remove moisture then transfer to a bowl. Add the buttermilk, vanilla, eggs, sugar, maple syrup and canola oil and mix until combined.
In a separate bowl mix your flour, baking soda, baking powder, and spices. Slowly add your wet mixture to the dry and mix. Once everything is combined, grease a loaf pan and pour your mixture 3/4 of the way to the top. Sprinkle the top with cinnamon sugar.
Bake at 400 for 15 minutes. Turn down your oven to 350 and bake for another 35-40 minutes. Let cool on a rack for 15 to 20 minutes. Serve with butter!
