Paprika Roast Chicken

Recipe

1.5 - 2 lbs of Chicken Thigh or Chicken Thigh + Leg

1 White Onion

1 tbsp Paprika

1 tbsp Smoked Paprika

1/2 tbsp garlic powder

1/2 tbsp onion powder

1/2 tbsp chilli powder

1/2 tbsp salt

1/2 tbsp ground pepper

1 tbsp EVOO

Italian Parsley for finishing

Preheat your oven to 400°. Slice your onion into 4-5 slices, set aside. In a bowl, mix your spices. Take chicken out and pat dry. Put your chicken on a cutting board and thoroughly season all sides with the spice mixture. Take a baking tray and cover with parchment paper. Place onions on the tray in a rectangular shape, your chicken will cook on top of the onions. Drizzle olive oil over the chicken. Cook at 400° for 40-45 minutes. Take out of the oven and plate. Pour the juice in the tray over the chicken. Sprinkle with roughly chopped parsley and serve!
