Sausage and Kale Soup

Ingredients

2 Chorizo Sausage Links

2 Spicy Italian Sausage Links

4 Carrots sliced

4 Celery sliced

2 Leeks slices

10 Baby Red Potatoes quartered

1 white onioned roughly chopped

3 Garlic Cloves minced

3 tbsp Olive Oil

5 Thyme Springs

3 Rosemary Springs

1 Parmesan rind (optional)

Salt and Pepper

1 Bunch of Parsley as garnish

Grated Parmesan to garnish

Pour 2 tbsp of olive oil into a pot and let it heat up for 30 seconds. Remove the casing from the sausage and add to the pot. Let it brown and use a wooden spoon to separate into little pieces. Remove sausage from the pot after 10 minutes or fully cooked and starting to brown. Add 1 tbsp of olive oil to the pot, then add in your onions, leeks, and potatoes. Stir and cook for 2 minutes. Add in your carrots, celery, garlic, 2 teaspoons of salt, and 30 turns of ground pepper. Stir and cook for 3 minutes. Add your chicken broth, rosemary, and thyme, and let everything come to a boil. Once it is boiling, turn the soup to low and add your sausage back in. Stir in your sausage and let the flavors come together for 5 - 10 minutes. Remove your rosemary, thyme, and parmesan rind. Serve with freshly chopped parsley and parmesan.
