Steak with Soy, Ginger, Garlic, and Scallions
Ingredients (Serves 3-4)
2 lbs NY or Ribeye Steak (something thick with marbling)
Salt & Pepper
2 tbsp Olive Oil
2-3 cloves garlic
1 bunch of Scallions / Green Onions
1 piece of Ginger
2 tbsp Soy Sauce
1 tbsp Honey
1/2 tsp Sesame Oil
1 tbsp butter
Heat your oven to 400 degrees. Let your steak rest at room temperature for 1 hour. After your steak has been sitting out, pat your steak dry with a paper towel. Season with salt a pepper and make sure to get the sides of the steak too!
Cut your scallions in half then lengthwise. Peel your ginger and cut into thin 1-inch strips. Mix your steak sauce - soy sauce, sesame oil, and honey.
Thinly slice 2-3 cloves of garlic. Heat up your pan then add 1 tbsp of olive oil. Brown the garlic in the oil, for about 5 minutes, stirring consistently. Remove the garlic once crispy and put in a paper towel to dry. Lightly salt the garlic.
Add 1 tbsp of olive oil to the same pan. Make sure your pan is on medium-high and add your steak. Sear on the first side for 3 minutes. Turn your steak over and sear for 2 minutes. Add your soy honey sauce, ginger, scallions, and butter. Transfer to the oven for 5 minutes. Or until your steak is 120° - 130° (if you have a meat thermometer.) My steak was about 1.5 inches thick, your cook time will depend on how thick your steak is. The total cooking time for me was 10 - 12 minutes. Let your steak rest for 10 minutes off of the heat (on a rack if you have one or a cutting board is fine.) Slice against the grain and plate. Spoon your sauce over the steak along with the ginger and scallions. Top with your crispy garlic and serve with rice.
