Hamachi Crudo with Kumquats and Basil

Recipe (2-4 people)

1/2 pound sashimi grade yellowtail

4 kumquats

Basil for garnish

1 serrano pepper

Sauce:

1/4 cup rice vinegar

1 tsp sesame oil

2 tsp olive oil

Squeeze of 1/2 lime

Thinly slice yellowtail and plate. Pour the rice vinegar, sesame oil, olive oil, and lime over the fish. Move the sauce around the plate to coat the fish. Arrange your kumquats, basil, and serrano peppers. Enjoy this summery and fresh crudo!
