Soy Honey Halibut in Parchment Paper

Recipe (2 people)

*Note - add any vegetable you desire to this dish. It steams nicely in the parchment paper. I change it up almost every time I make this but stick to things that go well with the soy marinade.

Ingredients:

1 lb halibut

25 snap peas

1 yellow pepper

1 red pepper

1-2 carrots

1/2 bunch cilantro

2 green onion

Optional -

4-5 Bok Choy

Lemongrass

Basil or Thai Basil

Sliced jalapeno or serano peppers

1-2 sliced lime

Marinade:

1/2 cup soy sauce

1/4 cup rice vinegar

1/4 mirin

1.5 tbsp honey

3 tsp sesame oil

3 tsp olive oil

1 tbsp ginger

1 tbsp garlic

Few dashes of red pepper (if you like spice)

Preheat your oven to 400 degrees. Cut your carrots and peppers into thin slices, set aside. Combine all the marinade ingredients and stir together.

Arrange a large pan with parchment paper. Make sure the piece of parchment paper is large enough to fold twice over the pan - a large piece makes it easier to fold over when closing the paper over the fish & vegetables. Pat halibut dry with a paper towel to remove excess moisture. Place fish in the center of the parchment paper. Arrange vegetables around the fish. Cover fish in the marinade and use any extra on the vegetables. Don’t worry about the vegetables being fully covered in the marinade. Chop your herbs (cilantro, basil) and green onion. Sprinkle generously over the fish and veggies. If using lemongrass, place lemongrass on top of everything, you will discard this before eating. Place lime slices on top of everything. Fold the parchment paper over the fish and fold the sides into itself creating a seal. It does not have to close completely or be perfect, the fish and veggies will still steam.

Cook the fish at 400 degrees for 20 minutes.

Remove the top piece of parchment paper, careful of the hot steam. Discard lemongrass and limes. Serve over rice.
